C - do you like eating fruit? If so, stock up on lots of that - you can eat as much as you want, and it has minimal calories. It makes a good and healthy alternative to the usual snacking (which I'm guilty of as well, so I know what you mean on this). Also, as a general "cooking" tip - instead of frying stuff, grill it instead - you still get the flavour of your chicken, bacon etc, but without the fat.
Also, an easy way to have a healthy meal w/out much cooking hassle - bake some fish, (a good fillet of cod or what have you, flavoured with herbs and lemon juice etc is good) for 20-30 mins, and have that with some steamed vegetables (whatever you prefer) - that's filling, and again not much in the way of calories too....I'm with davenotdead on the salads too - you could put together a yummy chicken salad, for example.
I wouldn't recommend not eating - I've tried that before, and just ended up snacking at the end of it, thus defeating the point entirely.
